This Mango Sorbet is a nutrient-rich dessert, packed with vitamins A and C from mangoes and heart-healthy fats from coconut milk. It's naturally sweet, dairy-free, and hydrating, making it an ideal treat for the whole family during the warm summer months. Plus, its simple, wholesome ingredients support a balanced diet, offering a delicious way to enjoy the benefits of natural fruits and healthy fats.
Adding the chopped nuts adds protein to make this a well-balanced dish including protein, fat & fibre.
Ingredients
3 x cups frozen mango chunks
1 x 400mL tin of full fat coconut milk (opt for a brand that includes only coconut & water)
1 x lime, using zest and 3 tbsp juice.
1 x tablespoon honey or maple syrup (optional)
Preparation
Add mangoes to a blender or food processor.
Blend until the mixture becomes crumbly.
Add the coconut milk, lime zest & juice, and maple syrup or honey (if using) to the blender.
Blend again until smooth, scraping down the sides as needed.
Pour the mixture into a freezer-friendly, airtight container.
Freeze for 3-6 hours, or until completely frozen.
Before serving, allow the sorbet to thaw for 20-60 minutes as it can take a while to soften.
Serve with chopped nuts for protein & texture.
