About the Recipe
Green vegetables are nutritional powerhouses, packed with vitamins, minerals, and antioxidants. Adding them to a tasty omelette boosts its health value. Ingredients
1-2 cups chopped greens such as cabbage, zucchini, kale, spinach, with onions.
2 x eggs, beaten with salt & pepper & turmeric.
Top with nutritional yeast, quality parmesan or goat’s fetta.
Optional chilli, lemon or herbs
Serve with avocado and optional sweet potato (½ cup)
Preparation
Stir fry the vegetables and put aside.
Pour beaten eggs in pan, and form omelette base, let cook for 2 minutes.
Top with stir fried veg and cook for another minute or until omelette is formed. Add chilli, lemon or herbs here if using.
Gently fold out onto a plate.
Top with nutritional yeast (for dairy free option), feta or parmesan.
Serve with avocado and sauerkraut, and optional roasted sweet potato or on top of sprouted bread.
