About the Recipe

Green vegetables are nutritional powerhouses, packed with vitamins, minerals, and antioxidants. Adding them to a tasty omelette boosts its health value. Spinach, kale, and cabbage enhance flavour and provide fibre, vitamins A and K, and folate. Prioritize green goodness to create a delicious and nutritious omelette for optimal well-being. Makes an excellent breakfast, lunch or even dinner in a hurry!

Ingredients

  • 1-2 cups chopped greens such as cabbage, zucchini, kale, spinach, with onions.

  • 2 x eggs, beaten with salt & pepper & turmeric.

  • Top with nutritional yeast, quality parmesan or goat’s fetta.

  • Optional chilli, lemon or herbs

  • Serve with avocado and optional sweet potato (½ cup)

Preparation

  1. Stir fry the vegetables and put aside.

  2. Pour beaten eggs in pan, and form omelette base, let cook for 2 minutes.

  3. Top with stir fried veg and cook for another minute or until omelette is formed. Add chilli, lemon or herbs here if using.

  4. Gently fold out onto a plate.

  5. Top with nutritional yeast (for dairy free option), feta or parmesan.

  6. Serve with avocado and sauerkraut, and optional roasted sweet potato or on top of sprouted bread.
